I think we're having Shepard's Pie and we may or may not be going to my Mom's place to have dinner with her, haven't decided yet.

Will be having shrimp cocktail, strip steaks, scalloped potatoes, brussel sprouts... and apple and/or coconut creams pies for dessert with coffee. (not decaf)

I haven't made a Shepard's pie in forever. That sounds good.
Rella, your menu sound good - especially the coconut cream pie. Actually, there's some shredded coconut in the freezer - maybe I'll make one.

I just did not plan for Easter dinner since the kids/grands and my parents wouldn't be here, so it won't be the traditional fare.  Of course, I'll make deviled eggs. There's one large ham steak in the fridge, so there's that. If I pan fry it in a little butter, I should be able to render enough fat and flavor for a small amount of red eye gravy. Either biscuits or cornbread, and open a can of green beans and boil them to death with a piece of ham in them.

Sounds great.

I have been doing this recently with my ham steaks.

I score them and put whole cloves in just like I would a whole or half ham.

then I add either some pineapple rings or pine apple tidbits with cherries on top.

I pour a small amount of a mixture of brown sugar, pineapple juice and gingerale..
over and bake until ham is warm and pineapple starts to brown a bit.

Tastes just like I had baked a whole or half ham... and is a good solution for 2 people.

I suspect this is the first year in over 50 that I am not eating leftover turkey and egg salad sandwiches today.  Immediate family and their significant others only this year. Chicken cordon bleu, potatoes, and asparagus.  For desert, cheesecake.

That sounds like an old southern girl cooking! SOUND GOOD I can almost taste it. My mother taught me how to make that. Where's the grits?  ::yummy::

RB, I would have used bacon grease if I'd had some bacon in the fridge!  ::smile::

My paternal grandmother's family were from Georgia, so my southern cooking tendencies and recipes came from her.  Grits, biscuits and cornbread in a cast iron skillet, green beans simmered until the pot liquor is dark and golden.... yep, all from my southern grandma.

Here in the south we call Grites.... Georgia ice cream! Several ways to make them that's really good.

Sorry, missed this one.   Not the typical Easter.    Grilled some chicken with lemon pepper rub, cornbread dressing, and broccoli.   Made come cream cheese brownies for dessert.

Not the best Easter ever.
