Rella, your menu sound good - especially the coconut cream pie. Actually, there's some shredded coconut in the freezer - maybe I'll make one.
I just did not plan for Easter dinner since the kids/grands and my parents wouldn't be here, so it won't be the traditional fare. Of course, I'll make deviled eggs. There's one large ham steak in the fridge, so there's that. If I pan fry it in a little butter, I should be able to render enough fat and flavor for a small amount of red eye gravy. Either biscuits or cornbread, and open a can of green beans and boil them to death with a piece of ham in them.
