Green Spaghetti:

Four Boneless, skinless chicken breasts, cubed.
2 Pkgs of Knorr Pesto Mix
1 cup water
1/2 cup of Olive Oil

Place cut chicken in baking dish
Mix Pesto mix with oil and water pour over chicken.
Cover with foil and bake at 350 for one hour.

Spoon over Angel Hair Pasta cooked aldente'. 
Serve with Parmesan cheese on the side
Serves 3-4. 

This recipe is too easy and too good. My sons love it, it's a family fav.  Good enough to serve when company comes over!

Greek Chicken Pasta:

Four to five boneless, skinless, Chicken breasts, cubed.
Cavendars Greek seasoning
1 onion cut into 1 inch pieces
10 pkg of frozen chopped spinach (Thawed and drained)
1 LB of spaghetti cooked aldente'
1 8 oz bottle of Italian dressing
1/2 cup of Parmesan Cheese


Sprinkle Chicken cubes generously with Cavendars, and saute in oil until brown.
Take the chicken out and set aside, add in the onions and saute till just soft.
Toss the Spaghetti, the onions, the chicken and the Spinach together, add the
dressing and 1/2 cup of Parmesan cheese and toss again. Serves 4.


This recipe is tre easy and my kids eat it up... My husband loves this and I have served this for company a few times. It's so easy and good.

Creamy onion bake chicken

1 chicken, cut up
½ C butter
1 can cream chicken, mushroom soup
1 large onion, chopped
½ C flour
2/3 C evaporated milk
1 C grated cheese
Dash of paprika
Salt & pepper

Salt and pepper chicken, lightly coat with flour.  Arrange chicken pieces in single layer with skin side down in melted butter in 13x9 pan.  Bake uncovered in 425 oven for 30 min.  Turn chicken over and continue to bake for about 15-20 min. longer.  Remove from oven.  Drain.  Combine remaining ingredients, except paprika and bring to light boil.  Pour over chicken.  Sprinkle with paprika and cover with foil.  Return to oven and bake 15-20 min.  Serve with rice.

I think I will try this with my "Cooked chicken" that I have in the freezer...  cutting back the cooking time, since my chicken is already done. Thanks.  I can skip right to the "Combine remaining ingredients, except paprika and bring to light boil.  Pour over chicken.  Sprinkle with paprika and cover with foil.  Return to oven and bake 15-20 min.  Serve with rice." part and have dinner in 30 minutes!

Thus, the blessing of having my son grill up that chicken in advance... no raw chicken mess.... and half the cooking time to dinner!

Cajun Chicken

Chicken breast                                    Large can mushroom soup
Green pepper                                      onion
Lipton onion soup mix                       Cajun spice
Cut chicken in strips and sprinkle with Cajun spice.  Fry in oil until brown. Put in crock-pot with all the other ingredients.
