Chicken Pot Pie Recipes

As silly as it might sound, I've really developed an appreciation for homemade Chicken Pot Pie and ever since my wife made a great one a couple weeks back I've been curious about other Chicken Pot Pie recipes. So does anyone have any that are out of the ordinary?

I don't know if it's still there or not, but there used to be a good but easy recipe for Chicken Pot Pie on the Bisquick box. It's not on the fat free one though. Anyway, here it is.

       Easy Chicken Pot Pie

16 oz. bag frozen mixed vegetables
2 cups cut-up cooked chicken
1 large can Condensed Cream of Chicken Soup
1 cup Bisquick mix
1/2 milk
1 egg

Heat oven to 400 degrees. In ungreased 9x13 inch pan,
stir together vegetables, chicken and soup. In bowl, stir
remaining ingredients until blended.

Pour over mixture in pan. Bake about 45 minutes, or until
top is golden brown. The recipe on the box calls for 1 2/3
cups vegetables and 1 cup chicken. I simply changed it to
a 16 oz. bag of vegetables and doubled the chicken since
1 cup isn't enough. So the larger pan is needed. I like easy
recipes.

Here are a couple more, first one being a bit unusual but I usually get requests for it.

Chicken Pot Pie

10 deep pie pan
Preheat oven to 375

Two Pie Crusts

1 lb cubed chicken breast
1 cup Italian salad dressing
4 oz cream cheese
1/2 onion
1 1/2 to 2 cups cooked veggies (I use whatever is around that works with chicken - celery, carrot, mushrooms)
3/4 cup chicken broth
2 tbsp flour
spice to taste - I use garlic, rosemary, thyme, pepper, salt, little parsley

Cook onion until soft in a bit of olive oil or butter
Add the chicken and Italian dressing, cook for 4 minutes until chicken is white
Add cream cheese, stir and heat until blended
blend in flour until smooth
add broth, veggies spice, cook 4 more minutes

Make and vent pie, cook for 35-40 minutes.

A creamier pie is like the poster's above:

1 pound cooked cubed chicken
1 can mixed vegetables
1 can potato soup
1/4 teas pepper, thyme, parsley and a bit of salt

Make and vent the pie, cook about 30 minutes
