I found this one somewhere. It's a generic recipe that can be used fo many different kinds of bread.

Choose-A-Fruit-Or-Vegetable-Bread

1/2 cup oleo or butter
1/2 cup sugar (or artificial sweetener)
2 eggs (or Egg Beaters egg substitute)
2 TBsps. milk
1 tsp. vanilla
1 tsp. lemon peel
1 cup shredded carrots or chopped fruit
1 1/2 cups flour
1/2 cup Quick Oats
1 tsp. baking soda
1 1/2 tsps. cinnamon
1/2 cup walnuts, pecans, or other nuts (optional)
1/2 cup raisins (optional)

Whether or not all of these ingredients are used depends
on the flavor of bread you're making. First, heat oven to
350 degrees.

In a large bowl, beat oleo or butter for 30 seconds. Add
sugar and beat until fluffy. Add eggs, milk, vanilla, lemon
peel and beat well. Stir in vegetable or fruit. Add flour, oats,
cinnamon and beat until combined. Stir in nuts and raisins
if desired.

Pour into greased ring pan or loaf pan. Bake for 35-40 minutes
for ring pan, and 55-60 minutes for loaf pan. Cover with foil for
last 10 minutes of baking. Cool, then wrap in foil and store in
fridge overnight for easier slicing.
