For the chocolate lover (like me) who can't have sugar, here is a great sugar free recipe for pancakes that I came up with a short while back.

Cocoa Honey Pancakes

1 1/4 cups self-rising flour
1/4 cup cocoa powder
1 1/2 tsps. baking powder
1/4 cup Splenda
1 1/2 tsps. cinnamon
1/4 cup sugar free honey (Walmart has it)
1/3-1/2 cup milk
1 egg
2 TBsps. margarine or butter

In a small bowl, stir dry ingredients together.
Stir in remaining ingredients and beat until
well blended and smooth. Cook as usual

Watch carefully since the chocolate prevents
you from telling when it has browned enough
to flip.
