These are really easy since you don't have to bake them.
They're more like candy really.

        No Bake Cookies

1 cup sugar
1/2 oleo or butter
1/2 cup evaporated milk
6 oz. chocolate chips
1 1/2 cups peanut butter
1 tsp. vanilla
7 oz. coconut
1 cup Quick Oats

Put sugar, oleo or butter, and milk in large pan and bring
to a boil, stirring constantly. Remove from heat. Stir in
chocolate and peanut butter until well blended and
chocolate is melted. Stir in vanilla. Stir in coconut and enough
oats until mixture is very thick. Drop by spoon onto waxed
paper. Cool and refrigerate, Keep refrigerated.

Can you leave out coconut and up the oats?

Actually, I use cocoa for all my chocolate recipes. If I used chocolate chips, I would use semi-sweet. Yes, you can leave out the coconut and add more oats.
