A very old song says, "Mammy's gonna make a little short'nin' bread."  Does anybody here have a good recipe for that ancient delicacy?

It's my suspicion that short'nin' bread is probably something like Lorna Doones.  As for the song, there are more versions of it than pills in a Carter's bottle.

If you want REAL shortbread, buy Walker's. I had some fresh in Scotland once. Best stuff ever.

As Ewigkeit said, there are many variations to the song. Originally, it was a song sung by southern plantation workers in the mid 19th century.

Yep, if you shaped it into little balls and deep fried it, that's exactly what it would be. :)

Shortnin Bread

 1/2 cup butter, very very soft
 1/4 cup brown sugar
 1 cup flour

Directions

Preheat the oven to 350 degrees.
Cream the butter with the brown sugar. Add the flour a bit at a time until mixed well.
Roll out to 1/2-thickness and cut into "ladyfinger"-like slices.
Place on a greased pan and bake for 20 minutes or until just beginning to brown. Cool completely.


The word "short" does not always denote "Shortening"...  it denotes the "short" binder.... could be butter, or short, or even margarine.  They used what they had.  It was a plantation thing...

I also have this recipe for a "Short" bread muffin.  It's more like bread and baked in muffin tins, eaten as a bread with dinner.

1 3/4 cup flour
3 teaspoons baking powder
1 teaspoon salt
1 to 2 Tablespoons sugar
1 cup milk
1 to 2 eggs
2 to 4 Tablespoons short

Sift dry ingredients, add milk eggs and short, beaten together. 
Stir only enough to blend, ingredients. Bake in moderate oven 25 minutes.

This recipe came out of a cookbook that belonged to my great great granny when she was young... She got it with a bag of Town Crier Flour.

A moderate oven... is 350.  If you use medium or large eggs you need 2... if you use extra large eggs just the 1.  The sugar is a matter of taste...  LOL.

Actually, to be technical about it, butter and margarine are forms of shortening.  Many cake recipes call for butter, rather than a product like Crisco.
