Hmmm....braised salmon, saffron rice, and...a vegetable.  I wish I could make Brussels sprouts, but I can't get anyone else to like them!  I'll make fish sticks for the kids.  Luckily, there is still one store here that's sells enough salmon from the two of us for only $3.

I made chicken wrapped in bacon, tomato, bean sprouts and corn on the cob soaked in lemon juice. All baked.

 Unfortunately, i put to much lemon juice in it

I have really got to get back to my weekend cooking bit.

I've done that... it's really a great way to go. 

Another thing I did recently was cook up a LOT of chicken in advance, and froze it, then pulled it out as I needed it and used it in soup, salads, and pasta dishes... even sandwiches..  It worked really well for me.  I did not have to actually deal with raw chicken for a month when I made dinner.

Sunday night I made my easiest recipe, and it just so happens to be a family favorite, too (even my picky eater will eat it!). I had choir practice, so it could cook while I was gone.  You will need a Dutch oven for it, though.

Sear enough stew meat for your family (remember it shrinks while cooking!) on the stovetop.
Add one can cream of mushroom, and one of cream of chicken soup.
Sliced mushrooms
A half cup of milk
pepper and a little bit of powdered garlic.

Cook for about three hours, covered,  at 300 degrees, stirring occasionally and adding milk as needed.  Serve over rice.

I made this in my convection oven and it turned out fine!

I actually had something good tonight! I threw some coconut, flour, and chipotle chili powder in a mini food chopper, then dredged tilapia filets into egg white and then the coconut mixture. Baked for 12 minutes at 375 and a little lime juice sprinkled over it - yum! I also threw together a salad of spinach, tomatoes, cukes, parmesan, and some of that spray-on Caesar dressing. (That stuff's actually pretty good, btw.)

It's a toss-up between a baked sweet potato with a Laughing Cow cheese wedge or a Flatout wrap with spinach, tuna, cucumber, and peppers.

I made egg salad with the boiled eggs last night... and tonight we had left over Prime Rib and Steamed Broccoli. 

Tomorrow night we will have the rest of the Salmon from Sunday...  heated under the broiler I think.  With Terriyaki sauce on it. Green beans and some rice...  I think.

A salad (green leaf lettuce, cherry tomatoes, cucumbers, radicchio, and Italian dressing), green beans, and grilled pork chops (marinade: evoo, a little pinot grigio, cilantro, garlic, salt, pepper, and lemon juice), and cantaloupe.

   I discovered a way to make the cheaper cuts of steak, like chuck for instance, as tasty and tender as fillet Mignon.  The flavor is already there its just tough as an old boot.   Lay your chuck steak flat on a cutting board, take a cleaver and pound the thing in both directions then turn it over and repeat cleaver pounding.  then saute in a hot greased skillet.  Its for tender and delicious.  The shorter time its in the skillet the more tender it it.  You gotta love it.
