The reason is because certain resurrection theology is based upon the foundational constructs of their understanding of original sin. Resurrection, to them, is part of a last days’ scenario.
It is assumed that Adam and Eve were created as immortal beings.
It is also assumed that because of sin it results (eventually) in physical death.
