I'm a huge fan of a game with a great story, which most of these have.

I may have missed a few, but that's all I can think of off the top of my head.  I don't mind playing all of those games through countless times (with the exception of Bf:BC, which the multi doesn't get boring for me).

Final Fantasy will never get old.
Zelda and Mario games rock.
Racing games are alright.
  Jak X Combat Racing is FUN, though.
Fighting games are alright.
  Soul Calibur II with Link is my favorite.

My absolute FAVs:
Final Fantasy VIII and FFX
Ace Combat Series. ALL of them. I'll kill anyone in here at those games. lol.
Zone of the Enders: 2nd Runner.
MGS games.
Shin Megami Tensei: Nocturne
DOOM games
Command and Conquer games on the PC
Most any Star Wars game
N64 games rule
