Title: Low Carb Desserts?
Post by: tennman on Wed Jul 06, 2011 - 17:57:09
I always feel better when I eat low carb and low sugar (which is about the same thing) but I'm really craving sugary desserts that will go unmentioned.

Does anyone know any low sugar desserts that scratch the same itch as the high sugar ones? And I mean REALLY low sugar desserts.

Hope some of you have some ideas.

Cherries are REALLY low on the glycemic index. That's the closest thing to a dessert that I really do. Otherwise I only eat sugary stuff in the morning or after a workout, and that's it. I'll have a banana, maybe some strawberries (also fairly low on the index) in the morning and again that's about it.

I think some fruit juices (like apple juice) are rather non-fattening too.

Fitting topic that I saw this come up.

Replace sugar with Erythritol blends, Allulose, Monk Fruit or Stevia sweeteners.  Make sure these sweeteners do not have Dextrose or some other agent that will spike insulin, could be hidden carbs there.

Stay away from most sugar alcohols like Maltitol that is used in "sugar free" candy.  It still spikes insulin, and can have a laxative effect because it feeds back bacteria in your gut.  The only sugar alcohol that is fine for most people is Erythritol.

I have made ice cream with Powdered Swerve (Erythritol) and Allulose (rare natural sugar), and it tastes like regular ice cream.

TC, I used Erythritol a little, but my main sweetener is monk fruit. I love that stuff. Many a night, I'll make a chocolate cake, brownie like dessert in a mug using monk fruit. Stir it up - zap it in the microwave, and there's my dessert - a warm chocolate something or other.

Good advice about avoiding the maltitol. That can cause a big, bad situation in the gut - with no warning.

Monk Fruit sweetener is one of the few that have a very pleasent taste, Stevia can leave an awful aftertaste IMO.
