Many today are bantering around the slogan "God said it, I believe it, and that settles it...'

i never heard it that way. 
'God said it, that settles it, i believe it.'...is how i always heard.   the settle factor is not that one believes it, but that God said it.

I heard some Baptist TV preachers say it "God said it, I believe it, that settles it".

And I've seen bumper stickers that way.

I've always heard it the way that Bobby said it, but that is a good point.  I hadn't thought of it that way, but I think that may betray something about the way we think.

Reminds me of the "God is my copilot" slogan.

I can't speak for anyone else, but my goal is "God is my pilot".

Nearly every time people would use that slogan "God says it, I believe it, that settles it" it was as basically as a defense of the status quo. Rather than considering different points of view they stuck to the "sound" view under the pretext that scripture is plain and unambiguous in what it teaches, and that anyone who came up with the "wrong" interpretation simply was dishonest or wasn't trying.

I've heard it more in discussions about either morality or the origin of the universe.

It's definitely a defensive phrase.
