I agree with hehealedme
You and your husband need to come to some sort of agreement about if/when you see them. I really dont understand why you 'have' to go on holiday with people who act like this even if they are family.Who is forcing you to have to go away with them?
Could you maybe agree to see them less frequently and just for a day or half a day maybe once every three months or so?
Other than that is there any possibility that you could move much further away so that it isnt possible to see them much becuase of the distance.?
I know that they need Jesus and you can both pray for them, but you do now have to think of your child and what influence that will have on him as he grows up.

It's so hard to find a balance. If you are anything like me, you want to protect your child(ren) from the negative in the world. Especially at such an important developmental period in your baby's life.

Is your husband insistent upon seeing them for birthdays and such? Do you feel obligated to go?

I guess I have come to a point in my life where I have decided that just because I am related to someone doesn't mean I have to be around them. If the person (and there is one in particular in my life) causes me heartache, stress and anxiety, which is affecting other relationships in my life (healthy ones) then I don't need that person. I pray about it and go on.

The hard part is that because this is your husband's family, you don't want to force him to not see his family. Because that can cause a problem in your  marriage. Like the others have said, you have to be a team and come up with a solution for you, your husband and your baby and don't worry about the others. Just life them up in prayer.
