LOLOL!!!

We eat anything on a regular basis. Say GBShorty, do you ship overseas love?

My favourite is Lapa and I have no idea what the name in english might be.

duckman

Janine,

Just keep it up, and you might incite me to use fowl language!

Ha Ha!

I just quack myself up sometimes!

Duckman

janine

How, with chains?

janine

Tightest money week yet!  Beans, beans, beans.  Thawing rabbit.  Time to forage for dandelion greens and Egyptian garlic.  Will let y'all know how it goes.  Ya never know what ya might find that's edible and good for you - in your own back yard!

Booty

Prawns? or some other creature?

I love langostinos, huge fat prawns!!

Janine the mutton was so good!!

Do you eat colcannon? It is a very economical and heavenly dish, I have it on good authourity that it was served at the Last Supper, after the bread and before the wine..

janine

I'd have said \"The Third White Meat\", but it darkens after it stews awhile.

What do you guys do in a tight-budget week, to keep meals interesting?

I've had to really get imaginative these past few days 'cause everyone's been home from work and school due to Carnival.

We woke up this morning, & Mike couldn't bear the thought of going to work.  He called in & told 'em to tack on another vacation day & rolled back over, bless him.

So, three meals (plus) a day for five people for five days now... in one of the least-flexible weeks, money-wise, I've had in a long time.  No palming the family off onto the schools or the workingman's lunchbox... I've had to cook.

Empty that pantry, Janine!

I've had more dried beans and game-meat-from-the-freezer this week!

Actually, the 6 or 8 squirrels I have stewing in a bubbling brown roux right now, came to me from my friend Ruby, one of many sweet, loving people I hated to leave behind in the NI congregation we were at a couple years ago.

Gotta take the time to write her a note on the occasion of feeding my family on her generosity!  (They were shot and frozen in 1999-2001.  {The sqirrels, not the NI Christians, ha!}  Being in a solid block of ice has kept them nice.)

So, what do you guys do when the budget is tight and the family is standing around even more than ususal drooling and sighing for the meals to be served?

patriciaredstone

African people like game meat. They call it bush meat. People raised on game meat usually can't stand the taste of domestic meat. The hunters at our church make gifts of bush meat to several African families from Ghana who are living and working here on visas. They LOVE it!

I go back to my college-days staple: ramen soup and peanut butter and jelly.

and by the way, I love me some squirrel. that's not roughin' it. That's fine dining.

janine

duck sauce-piquante... duck fricassee... duck roasted, stuffed with brown & wild rice, under its own little breast-blanket of fat... file gumbo with duck and andouille sausage...

janine

Which things about squirrels do not meet with Kosher law?

I mean, are you talking about OT outlines re: what animals can be eaten, or are you talking about what the dietary rabbis have to say today?

Patriciaredstone:  Rabbits are very easy to raise.  A buck & a couple of does... or say three does, so you can give them a generous time between breedings... of a large breed like Flemish Giant, will give a 3-person family on a health-conscious diet all the meat they need for the freezer.

I say use Giants because they have large litters, and you can slaughter the fryers at 8 weeks for a low outlay of feed and a large, tender carcasse.

I hope we get to go back to raising rabbits after we move down the bayou.

marc

I don't know.  We kept chickens when I was growing up, and I think this is at the root of my dislike of the sickening bird-creatures.

Booty

Not chains, but rottweilers may do the job nicely!!

You know Janine you would fit in well here, we frequently trade barter and raise food bits. I personally can live on fish!!!

We are discussing an expedition to Trujillo. We'll load up fish and shrimp and trade them for vegtables. The owner of the truck just wants a share and we can sell, barter and eat the veggies. A small basket of yucca will get you enough pargito to feed a family, I believe you call pargo Red Snapper.

Personally, since Sandi started her bakery, wow is it growing!! my wasteline, well it is growing as well!!  I just hope we can continue to find the materials and keep ahead of the prices. Right now we are aumenting the price per piece every week just to keep the margin. People understand, but sooner or later this will collapse.

I have designed an oven system and a walk in chiller, I'll get the production cost down. I did a btu loss study on our household oven, it is ridiculous!! I can heat twice the volume for one third the gas consumption!! And have a firewood alternative fuel capacity. Eduard and I start laying block in two weeks, if the refractory brick can be found where the people say it is. Perhaps this is throwing our money away, but we simply do not want to leave.

janine

Yesterday I found myself with approximately $6 in the bank and these items to create a supper for five with:

*enough frozen rabbit for a stew (if I add lots of veggies - which I like anyway)
*onions
*red beans
*pinto beans
*3 packs of Ramen noodles
*brown rice

The kids aren't into game, and I'd so recently subjected them to that HUGE pot of squirrels...  And Mike thinks Ramen noodles are an abomination unto God, Man, and Plant Life...  And we're about \"beaned out\" these days, and they'd have been vegetarian beans (ick), no sausage or salt pork... And there wasn't a green thing in sight!  I'd have had to tramp out into the swamp after some fresh greens...

So I \"went shopping\" in Grandma's pantry.  Mom-in-law is having trouble standing these days; if she can't poke it in the microwave or leave it unsupervised in a big casserole pot, it don't get cooked.  So she gave me some great stuff, fresh shrimp even!

I dumped the results on the kids with orders to cook something, & left to pick up Mike from work.

They were soooo grateful I hadn't thawed the rabbits!  They concocted a huge stovetop-casserole of elbow macaroni (pearly, just al dente!), super-lean ground beef, fresh onions, and the contents of various cans of chow mein mix.  Baby corncobs, water chestnuts, sugar snap reas, carrots, squash...   And lots and lots of spice mixes and SALT.

It tasted so good, I ate it anyway.  Mike was so relieved to actually get some salt in his food, he ate two huge servings.

It's nice to know I can turn my kids loose in the kitchen & they can be creative and end with such a :readytoeat: palatable dish out of such miscellany.

Of course now every pot I own is on the stove or countertop still dirty.  Ah well, it was either \"clean the kitchen\" or \"go to Bible classes\".

Their little black beady eyes were glistening so brightly at me...  \"Peel me!  Peel meeee!\" they sparkled at me in Morse Code.

I've PUH-LENTY of the Slimy Joe stuff left.  Come 'n' get it.

janine

Slip me your recipe and I'll eat it soon enough. :readytoeat:

A crawfish looks almost exactly like a small lobster.  They are fresh water critters, though (or as fresh as a swamp, marsh or rice paddy gets...)

Mature specimens of the most coveted size would be about half a meter long from nose-spike to tail-fins.

socrmom

Janine,  You aren't REALLY serious about the squirrel, ARE YOU?  ???

Just checking.    socrmom

janine

The tastes overlap, I think, and a lot depends upon what the animal ate and how old it is.

A really young, tender nutria tastes like a wild rabbit.  The last one I got, though, was a mature one, almost as large as my youngest child at that time.  (Can you say 'capybara'?  I knew you could!)  One that size, from the marsh where he had access to brackish water, tastes just like mutton.

Ducks?  Ducks?  I can't believe my ears!  Am I now an endangered species down on the bayou?

Well, I never!   :0

I've had squirrel before. Several of my uncles went hunting and came back with sacks full. I think the sacks were pillow cases. The taste was spicey. But, alas, as most uncommonly eaten meats do, it tasted like chicken.

Hehehe....nevermind.

Now it doesn't comply with my Kosher diet. :-)

Now that's just gross! :goingtopuke: But maybe that's that great tasting \"extra seasoning\" we get from KFC! It's finger lickin' good. :yummy:

See Lev 11:3
Jews are only allowed to eat land animals which have completely split hooves and chew the cud.

Squirrels have paws and don't chew cud - meaning they have only one stomach.

Hope that helps.

A bumper sticker I saw two days ago:

I love cats, They taste just like Chicken!

simple minded

 Janine,
You sound like an incredibule mom. Very creative.   Cambell's soup is a challenge for me. First dinner I ever made my husband. Fried chicken, one problem, mixed up the powder sugar with the flower. Funny thing, I thought the chicken was  bad. Oh well, he is thriving, despite my culinary skills. Of course one night he got really sick. A friend told me too use that ground garlic in a jar. I was making spagetti. I figured half the jar too be good. She wasn't very specific. Couldn't figure out why the meatballs fell apart, though. They were round when I plopped them in the sauce,RAW.?? Kind of cool. Never knew my husband could turn so many different colors. Good man, my own little rainbow.

You and your family are in my prayers.

janine

You haven't reached the \"run away screaming\" stage yet; as long as it's still this continuous \"wait and see\", what is wrong with such a virtuous enterprise?

Now, if the Chavistas were rolling down your street torching houses, and Booty wanted to stay and lay another course of bricks...  that'd be silly.

Hey, how's Bunny, anyway?

I found today my Ginger won't eat spinach.  She loves St. Augustine grass and centipede grass, but not my good (accidentally spilled) spinach.  She's naturally quirky though.  No accounting for taste.

She loves squirrels  :yummy: ...

marc

Times like this when the poster from West Virginia should keep quiet, but. . .

I don't like squirrel.  I'm in the minority in my family.  It does make good gravy, though.

duckman

Janine,

Personnaly, I'd stick with the beans (over squirrel and nutria!).

If Mike has the day off, encourage (make, force, demand!) him to go catch you some specks and reds.  The weather down there should be getting right for it.  That sure would beat squirrel or nutria, and would also reduce the odor of a long week of beans!

Duckman

janine

Not that we don't keep Ramen noodles around... more as an after-school snack than a staple... But, Mike considers them to not actually be a real, human-appropriate food.

If you're a Red Dwarf fan (Sci-Fi BritCom), you'll recall the frequent jokes about \"pot noodle\", how tastless it is, how indestructible by millions of years of time (or even one's own digestive juices) it is... I think \"pot noodle\" is the Britishism for \"Ramen noodle\".

Another thing about wild/domestic taste: neither the chickens & ducks, nor any of their eggs, that I was able to produce myself when we first moved back down here, tasted anything like the mass-produced storebought variety.

The squirrels met their stewed end bravely. :bowsmiley:  God made them, and they were very good.

patriciaredstone

We might be in a food-budget pinch before long.

Our son's illness (high-risk to develop lymphoma), is being treated with a very strict diet. We are supporting him by eating the same food ... which is very good, by the way. Basically, it is no processed foods (no preservatives, dyes, additives (like hydrogenated palm kernal oil), no pesticides (which means grown under organic farming methods) no suger (only honey), dairy is only goat milk products, no flours, but he can have the sprouted grain breads, he can have meat as long as it is very fresh. Also, our laundry, dish soaps, bath soaps and household cleaners must be as free of chemicals as possible.

The great thing about living in California is that it is fairly easy to satisfy these requirements at local stores. We are able to find everything we need for the week in about four different stores -- but we have had to double our food budget to twice as much for the week!

So, Janine next time you have some extra frogs, squirrel, nutria, rabbit, ducks ... anything! send some my way, too!

(Frog legs are my favorite swamp food! My mama always has some waiting for me when I get home to Mississippi. Once, though I remember the frogs getting out of the bag that my daddy -- who had too many beers with my uncle that night -- threw in the freezer. You can only imagine my mama's scream when she opened the freezer the next day!)

janine

Have a Cajun McChicken, too, while you're there...

Have you ever seen a documentary on commercial chicken production?  Ever heard of \"fecal soup\"? :goingtopuke:

I hate chicken.  I've always thought that if God intended us to eat chickens, he wouldn't have covered them with feathers.  And after some reports from my aunt, who used to run a chicken farm for Tyson or one of those big outfits, I can't even think about the nasty things without nausea creeping in.

:D I'd love to get ahold of that bumper sticker! Maybe it will inspire my inner-city neighbors to keep their kittys closer to home ....

Janine:  I agree that there's some good stuff to forage from the field.  My mom used to gather poke salad and fix it with bacon drippings and boiled eggs.  I hope you are doing OK...your note worried me some.  Seems like you hadn't been posting as much.  I miss Booty, too.   Praying that everything is OK with both of you.

Bon Voyage

boiled crawfish?

I think I'd eat the other stuff.

gbShorty

Janine, I wish you lived close by!  I'm always getting rid of wild game.  Too many avid hunters/fishermen in the family.  My freezer is crammed with deer, quail, pheasant, wild turkey and some really good trout.  There used to be a rabbit (fur and all) in the freezer door that looked like a frozen cat.  I forget what the plans for it were.  I give most of the meat away because they hunt more than I cook!
